Strawberries And Cream With A Twist

In the summer I love to experiment with different recipes to create yummy stress free snacks. As summer approaches and we get out our picnic baskets and host garden parties, I’m going to share with you a few meal ideas that i’m currently loving.

Strawberries And Cream With A Twist:

Strawberries, chocolate and cream are a match made in heaven. As the sun decided to put its hat on this weekend I decided to get in the kitchen and try out some snack ideas that I’ve wanted to try out for ages. This was a winner with the whole family, it’s light, fresh and creamy and made for a perfect snack whilst soaking up the sun in the garden.

You Will Need:

                   150g of plain chocolate                    

150ml of double cream

25g of butter

Desiccated coconut



  1. Place a heatproof bowl over a saucepan of simmering water, making sure the bowl doesn’t touch the water.
  2. Break the chocolate into small pieces and put them into the bowl, and then add the cream and butter. Stir the mixture until the chocolate has melted.
  3. Take the saucepan of the heat, then take the bowl of the saucepan and leave it to cool for a few minutes. Carefully pour the mixture into the container. Put the lid on the container and leave it in the fridge for 3 hours.
  4. Once cooled and has a mousse consistency distribute it out to as many serving as you like.serve it with strawberries, creme fraiche and a sprinkle of desiccated coconut, for the perfect summer snack.

{Extra Tip: you can also make truffles with this mixtures, to do so leave the mixture in the fridge for at least 4 hours to allow it to set. Once the mixture is set roll small balls of the chocolate mixture in your hands. You can then roll them in cocoa or any preference you may have, like desiccated coconut or crushed pistachios.}
